Yuca Bites

  1. Cook yuca in saucepan of boiling water 25 to 30 min.
  2. or until tender; drain.
  3. Mash yuca; place in medium bowl.
  4. Add cheese, flour, baking powder and egg yolk; mix well.
  5. Beat egg white in small bowl with mixer on high speed until stiff peaks form.
  6. Gently stir into yuca mixture.
  7. Divide into 24 portions; roll each into log.
  8. Dip logs, 1 at a time, in cracker crumbs, turning to evenly coat.
  9. Heat oil in medium saucepan to 375 degrees F. Meanwhile, mix mayo and garlic until blended.
  10. Add yuca logs, in batches, to hot oil; cook 4 min.
  11. or until golden brown.
  12. Remove from oil with slotted spoon; drain on paper towels.
  13. Serve warm with mayo mixture.
