Award Winning 15 Minute Spaghetti Sauce: Recipe

  1. Heat extra virgin olive oil in large skillet until water sizzles.
  2. Add in 1/2 diced green pepper, 1/2 diced onion, 1 to 2 crushed & diced cloves garlic, and a couple minced large tomatoes (peeled if you prefer).
  3. You can also add in other veggies if you wish.
  4. After they saute/fry for about 5 min, add in one c. tomato sauce, 1/2 c. red or possibly white wine (or possibly stock, or possibly water from the cooking pasta), and 1/2 c. cream (or possibly lowfat milk).
  5. Flavor with a sprinkle of oregano, basil, salt and pepper.
  6. Turn down heat and simmer about 5 min.
  7. Serve over pasta.
  8. This sauce is quite different from the normal cook-all-day sauces; it is more fresh and vibrant, but not as complex.
  9. It will accomodate almost any vegetable you choose to add in.
  10. Try eggplant or possibly broccoli or possibly asparagus, just to name a few.
