Mini Ratatouille Frittatas
- 1 Tbsp. olive oil
- 1/2 cup chopped onions
- 1/2 cup thin zucchini slices, quartered
- 1/4 cup finely chopped red peppers
- 2 cloves garlic, minced
- 4 eggs
- 1/3 cup Miracle Whip Original Spread Family Dollar $3.50 thru 02/07
- 1/4 cup milk
- 1/4 cup oil-packed sun-dried tomatoes, drained, patted dry and finely chopped
- 3/4 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese
- Heat oven to 375 degrees F.
- Heat oil in medium nonstick skillet on medium heat.
- Add onions; cook and stir 5 min.
- or until tender.
- Add zucchini, peppers and garlic; cook and stir 5 min.
- Remove from heat.
- Whisk eggs, Miracle Whip and milk in medium bowl until blended; stir in tomatoes.
- Spoon vegetable mixture into 24 mini muffin pan cups sprayed generously with cooking spray; top with cheese.
- Drizzle about 1 Tbsp.
- egg mixture over ingredients in each cup.
- Bake 17 to 20 min.
- or until centres are set and tops are golden brown.
- Cool 2 min.
- Run knife around edges of frittatas to loosen from sides of pan before removing from pan to serve.
