Flavored Herring Roe
- 500 grams Salted herring roe
- 200 ml Dashi stock
- 160 ml Sake
- 3 tbsp Mirin
- 2 tbsp Usukuchi soy sauce
- 1 Bonito flakes
- Immerse the salted herring roe in lightly salted water for 6-8 hours to remove the salt.
- (Change out the salt water every 2-3 hours)
- While the herring roe are soaking, make the marinade.
- Add all of the ingredients into a pot and boil.
- Then let it cool.
- Carefully peel off the thin outer skin of the herring roe.
- It's easy to do if you use a paper towel.
- Place the herring roe into a plastic container, add the marinade, and let soak for half a day to one night.
- Wrap the dried bonito flakes in a paper towel.
- Soaking them together will increase the flavor.
