Easy Healthy Banana Bread Recipe
- 1/3 c. oil
- 2 c. apple juice concentrate, thawed
- 2 c. mashed bananas, frzn, then thawed works best
- 1 carton Eggbeaters or possibly 4 Large eggs
- 3 c. Krusteaz whole wheat and honey pancake mix
- 1 c. lowfat milk
- 1/2 c. minced nuts (optional)
- Butter flavored Pam
- Mix together oil, applesauce, bananas and Eggbeaters.
- Add in pancake mix and lowfat milk.
- Stir in nuts.
- Spray 4 loaf pans with Pam.
- Pour batter into pans and bake for about 1 hour at 350 degrees.
- (Check after 50 min.)
- Bread is done when toothpick comes out clean.
- Cold on rack.
