Au Gratin Carrots

  1. Cook the carrots until crisp-tender; drain and set aside.
  2. In a saucepan over medium heat, saute onion in 3 tbsp.
  3. butter until tender.
  4. Stir inflour, salt and pepper.
  5. Gradually add milk; bring to a boil, stirring constantly.
  6. Cook for 1 minute or until thickened.
  7. Stir in the cheese justuntil melted.
  8. Add carrots and parsley.
  9. Pour into a greased 8-inch square baking dish.
  10. Melt remaining butter; add cornflakes.
  11. Sprinkle over carrots.
  12. Bake uncovered at 350F for 20-25 minutes or until bubbly.
