Champagne, Darling? Freezes

• 4 scoops lemon sorbet
• 2 ounces chilled vodka or 2 ounces citrus-infused vodka (Italian lemon liqueur) or 2 ounces limoncello (Italian lemon liqueur)
• 2 ounces prosecco or 2 ounces other sparkling wine or 2 ounces champagne
• 2 sprigs of fresh mint

1. Blend lemon sorbet on low speed and pour in vodka or lemon liqueur in a slow stream.
2. Add prosecco or Champagne.
3. Pour cocktails into a chilled martini glass and serve, garnished with a sprig of mint.
