6WBM Chipotle Roasted Chicken With Potatoes
- 1 12 teaspoons chipotle peppers (or chili powder)
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon minced garlic
- 12 teaspoon cumin
- 1 12 lbs small potatoes, quartered
- 1 egg white
- 2 teaspoons brown sugar substitute
- 3 12 chicken breasts, cut into strips (about 14 oz.)
- Combine pepper, paprika, oregano, garlic, and cumin in a small bowl and set aside.
- Toss potatoes with egg whites in a large mixing bowl, and then add 1 1/2 teaspoons of spice mixture and toss more.
- Add brown sugar substitute to remaining spices and rub into chicken.
- Place potatoes and meat in a pan, seal with aluminum foil, and bake for 50-60 minutes at 375 degrees or until potatoes are tender and meat registers 180 degrees on meat thermometer.
