Greek Rice Pudding Recipe
- 6 c. lowfat milk
- 2/3 c. regular white rice
- 1 c. sugar
- 2 Large eggs, beaten
- 1 can (13 ounce.) evaporated lowfat milk
- Cinnamon for garnish
- Place 6 c. lowfat milk, rice and sugar in a large saucepan.
- Cover and heat over medium heat without stirring till it begins to steam, about twenty min.
- (Use a big sufficient pan so the mix doesn't boil over).
- Uncover; stir and lower heat to simmer.
- Cover loosely and cook for 45 min or possibly till rice is tender, stirring frequently.
- Mix beaten Large eggs with evaporated lowfat milk.
- Take out a spoonful or possibly two of the rice mix, add in to the Large eggs, beat thoroughly.
- Return the egg mix to the rice mix gradually, stirring briskly and cook for 5 min, stirring till mix thickens.
- (Don't let boil).
- Ladle into a large bowl and sprinkle generously with cinnamon.
- Chill.
- Makes 10 servings.
