Oatcakes
- 2 cups rolled oats (not quick)
- 1 cup whole wheat flour
- 12 cup wheat bran
- 13 cup Splenda sugar substitute
- 12 teaspoon salt
- 1 egg, beaten
- 12 cup margarine, softened
- 4 tablespoons water
- 1 tablespoon vanilla
- Combine all of the dry ingredients.
- Add margarine to the dry mixture until crumbly.
- Melting the margarine helps.
- Add egg, vanilla, and water.
- Form into a dough.
- Divide the dough into 16 bars, approximately 1/2 inch thick.
- Bake at 350F for 15 minutes on a parchment-lined cookie sheet.
- Flip them over and bake for another 10 minutes.
