Orzo Chickpea Salad

  1. Cook orzo until tender.
  2. Drain chickpeas.
  3. In a large bowl, whisk lemon juice, lemon rind, oil, garlic, mustard and herbs.
  4. Add chickpeas.
  5. Let sit a few minutes.
  6. Add the drained orzo.
  7. Crumble in the goats cheese.
  8. Let rest for 15 minutes before serving.
  9. May be served warm or room temperature.
