Berry & Mint Breakfast Quinoa
- 1 cup Unsweetened Vanilla Almond Milk, Plus Additional For Serving
- 1/2 cups Uncooked Quinoa
- 2 bags (Single Serving Size) Earl Grey Tea
- 1- 1/2 Tablespoon Honey, Or To Taste
- 1/2 cups Fresh Strawberries, Chopped
- 1/2 cups Fresh Blueberries
- 1/2 teaspoons Fresh Mint, Diced
- In a large pot, bring almond milk to a boil.
- Once boiling, add in quinoa and tea bags, stirring well.
- Turn heat to low and cover pot.
- Let cook until milk is absorbed, about 15 minutes.
- Once quinoa is ready, remove tea bags and mix in honey.
- Divide quinoa between bowls.
- Top with strawberries and blueberries, and garnish with fresh mint.
- Pour additional almond milk over top and devour.
