Porcupine Meatball Appetizers
- 1 lb. (450 g) lean ground beef
- 1 cup instant white rice, uncooked
- 1/2 cup Kraft 100% Parmesan Grated Cheese
- 1/2 cup chopped onions Safeway 1 lb For $1.49 thru 02/09
- 1 carrot, shredded
- 1 egg
- 2 cups Classico di Napoli Tomato & Basil Pasta Sauce
- 1/2 cup each: chopped green and red peppers
- Heat oven to 350F.
- Mix meat, rice, cheese, onions, carrots and egg; shape into 36 small balls.
- Place in 13x9-inch baking dish.
- Combine pasta sauce and peppers; pour over meatballs.
- Cover with foil.
- Bake 1 hour or until meatballs are cooked through (160 degrees F).
