Hot Antipasto Shish Kabob Salad Recipe

  1. In a bowl, combine the extra virgin olive oil, vinegar, oregano and basil.
  2. Set aside.
  3. Roll cheese cubes in the bread crumbs to coat.
  4. Thread a cherry tomato, salami slice, cheese cube, zucchini slice, pepperoni slice, green pepper piece, artichoke heart and black olive onto each 12-inch wooden skewer.
  5. Preheat broiler.
  6. Place kabobs on a broiler-pan rack.
  7. Brush each with oil mix.
  8. Broil 3 to 4 min; brushing with oil mix.
  9. Serve hot.
  10. Makes 12 kabobs.
