Hot Antipasto Shish Kabob Salad Recipe
- 1 c. extra virgin olive oil
- 1/2 c. wine vinegar
- 1 teaspoon oregano
- 1 teaspoon basil
- 2 c. cherry tomatoes
- 12 slices salami, folded into quarters
- 1/2 c. cubed Swiss cheese
- 1/4 c. bread crumbs
- 1 med. zucchini, sliced
- 1 pepperoni stick, sliced
- 1 c. green pepper, minced
- 1 jar marinated artichoke hearts
- 1/2 c. black olives
- In a bowl, combine the extra virgin olive oil, vinegar, oregano and basil.
- Set aside.
- Roll cheese cubes in the bread crumbs to coat.
- Thread a cherry tomato, salami slice, cheese cube, zucchini slice, pepperoni slice, green pepper piece, artichoke heart and black olive onto each 12-inch wooden skewer.
- Preheat broiler.
- Place kabobs on a broiler-pan rack.
- Brush each with oil mix.
- Broil 3 to 4 min; brushing with oil mix.
- Serve hot.
- Makes 12 kabobs.
