Beef & Beer Casserole

  1. Preheat oven to 180*C.
  2. Prep beef, set aside.
  3. Prep bacon, garlic leek and mushrooms- set aside.
  4. Fry beef in batches until you get some good colour and set aside.
  5. Add a little more oil and fry leek, bacon, mushrooms and garlic for around 5 minutes or until onion has softened.
  6. Return the beef to pan with flour.
  7. Cook for 1 minute and add potatoes, thyme and bay leaves.
  8. Stir in beer and stock, pour into a large casserole dish- cover and bake for 2 hours.
  9. Remove thyme and bay leaves, serve with crusty bread.
  10. Yum!

  12. Foodie Josh Collins made a good point to use stout instead of lager.
  13. Very true, does give a beautiful rich flavour.
