Beef & Beer Casserole
- 750 grams Gravy beef, 3cm cubes
- 1 Leek, washed- halved lengthways and sliced
- 2 clove garlic, minced
- 4 Rashers bacon, sliced
- 200 grams Mushrooms, sliced
- 2 tbsp Plain flour
- 2 large washed potatoes, large cubes
- 2 Dried bay leaves
- 1 1/2 cup Beef stock
- 4 Sprigs thyme
- 375 ml Lager beer
- Preheat oven to 180*C.
- Prep beef, set aside.
- Prep bacon, garlic leek and mushrooms- set aside.
- Fry beef in batches until you get some good colour and set aside.
- Add a little more oil and fry leek, bacon, mushrooms and garlic for around 5 minutes or until onion has softened.
- Return the beef to pan with flour.
- Cook for 1 minute and add potatoes, thyme and bay leaves.
- Stir in beer and stock, pour into a large casserole dish- cover and bake for 2 hours.
- Remove thyme and bay leaves, serve with crusty bread.

- Very true, does give a beautiful rich flavour.
