Cornish Hen Made Easy
- 2 Cornish hens, washed and cavities cleaned
- 12 cup salted butter
- salt
- pepper
- 4 tablespoons minced garlic
- 12 cup olive oil (any kind)
- 1 lemon, halved and seeded
- 2 teaspoons parsley
- red pepper (optional)
- baking string
- Wash chickens with cold water inside and out.
- Place on rack Breast side up over shallow baking pan.
- Salt and Pepper cavities and place half of lemon in each cavity.
- Soften butter in bowl till almost melted (10 Seconds in microwave) Brush or rub butter all over chickens.
- Drizzle half of the olive oil (1/4 cup) over each chicken.
- Salt and pepper outside of chickens.
- Drizzle two Tablespoons each of minced garlic over each chicken.
- Shake or crumble about a teaspoon of fresh or dried parsley over each chicken.
- Dust very lightly with red pepper--no more than 1/4 teaspoon over each chicken.
- Tie up chicken legs (truss) Bake at 375 for 1 hour or until leg juices run clear.
- Brush off loose minced garlic from each chicken.
- Let rest 10 minutes, remove trussing string and serve.
