Jerk Tofu over Sweet Potato Mash
- 1 block (12 To 14 Oz. Block) Tofu, Sliced Into 8, Drained Of Water
- 2 whole Green Onions, Chopped (garnish)
- 18 cups Oil
- 1/2 cups Vegetable Stock
- 3 cloves Garlic, Minced
- 1 Tablespoon Fresh Minced Ginger
- 1/4 cups Molasses
- 18 cups Lime Juice
- 18 cups Apple Cider Vinegar
- 1 Tablespoon Hot Sauce
- 1 Tablespoon Brown Sugar
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Nutmeg
- 18 teaspoons Crushed Cloves
- 1/2 teaspoons Sea Salt
- 1 pinch Pepper
- 2 whole Sweet Potatoes, Chopped (you Can Peel Them If You Like)
- 18 cups Milk Alternative
- 1 Tablespoon Margarine
- 1/2 Tablespoons Brown Sugar
- 1 pinch Salt And Pepper

- Whisk all ingredients of the jerk marinade together.
- Place prepared tofu slices into shallow dish and pour marinade on top.
- Allow to marinate for at least 2 hours (but overnight is best).

- For the mash, boil sweet potato until tender.
- Drain water, mash roughly with the other ingredients, and set aside.
- 3.
- For the tofu, heat a large pan over medium heat.
- Brown both sides of the tofu (about 4 minutes on each side).
- When browned, pour in additional marinade and allow to bubble until the marinade reduces, shaking constantly (about 1 minute more).
- You can also grill the tofu, adding additional marinade, reducing the marinade separately.
- Serve tofu on top of the potato mash, drizzled with any extra sauce, and garnished with green onions, if desired.
