Shanghai Shrimp Salad
- 12 lb cooked small shrimp, shelled & deveined
- 14 head bok choy, finely shredded
- 14 lb bean sprouts
- 12 cup shredded carrot
- 1 celery rib, thinly sliced
- 1 -2 green onion, finely chopped
- 12 tablespoon fresh ginger, finely diced
- 14 cup canola oil
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 1 teaspoon honey
- Combine the ingredients for the salad in a large glass bowl.
- Mix together all the ingredients for the dressing in a smaller bowl.
- Pour the dressing over the salad the toss to coat.
