Berry Clafoutis
- 1 tablespoon caster sugar
- 2 punnets raspberries or blueberries
- 125 g PHILADELPHIA Light Cream Cheese
- 3/4 cup caster sugar, extra
- 1/4 cup flour, sifted
- 1 teaspoon vanilla
- 3 eggs
- 1/2 cup milk
- icing sugar, for dusting
- SPRINKLE sugar over the base of 4x1 cup capacity greased shallow ovenproof dishes.
- Divide berries evenly between the dishes.
- BEAT the PHILLY, extra sugar and flour with an electric beater until smooth.
- Gradually add the combined vanilla, eggs and milk, beat until smooth.
- Pour mixture evenly over berries.
- BAKE in a hot oven 200C for 20 minutes or until golden and cooked, dust with icing sugar.
- Serve immediately.
- HANDY TIP: Substitute with frozen or canned berries when fresh are not available.
