Kale, Potato and Sausage Soup
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- 1 lb. (450 g) baking potatoes (about 3), peeled, cut into 1/2-inch cubes
- 4 cups 25%-less-sodium chicken broth
- 8 cups loosely packed stemmed kale leaves, chopped
- 1/2 lb. (225 g) Italian sausage, cooked, diagonally cut into 1/2-inch-thick slices
- 1/3 cup chopped fresh parsley
- 2 Tbsp. Kraft 100% Parmesan Aged Grated Cheese
- Cook and stir onions and garlic in dressing in Dutch oven or stockpot on medium heat 5 min.
- Add potatoes and broth; stir.
- Bring to boil; simmer on medium-low heat 25 min.
- or until potatoes are tender.
- Stir in kale and sausage; simmer 3 min.
- or just until kale is wilted.
- Add parsley and cheese; stir.
