Lori's Chili Shrimp

  1. Prepare shrimp.
  2. In a saucepan combine the reserved shells, water, garlic, chiles, rosemary and fennel seeds.
  3. Bring to a boil.
  4. Reduce.
  5. Simmer 30 minutes.
  6. Strain.
  7. Return to saucepan.
  8. Return to a boil.
  9. Reduce to 1 1/2 cups (about 10 minutes).
  10. Add sherry.
  11. Bring to a boil.
  12. Reduce to 2 tablespoons (about 30 minutes).
  13. Add bell pepper.
  14. Cook 2 minutes.
  15. Add shrimp, onions, butter, salt and pepper.
  16. Heat until shrimp are just pink.
  17. Serve.
