Potato And Herb Bisque

  1. Add the oil and butter to a heavy soup pot.
  2. Add the onions, shallots, and garlic.
  3. Cook until just soft.
  4. Add the potatoes, broth, and herbs.
  5. Bring to a boil.
  6. Reduce the heat and simmer 45 minutes (or until the vegetables are tender).
  7. Check the seasonings.
  8. Serve warm garnished with the green onions.
