Chicken Pecan Quiche
- 2 cups finely chopped cooked chicken
- 1 cup grated monterey jack cheese
- 14 cup chopped scallion
- 1 tablespoon chopped parsley
- 1 tablespoon all-purpose flour
- 1 (9 inch) unbaked pie shells
- 3 eggs, beaten
- 1 14 cups half-and-half
- 12 teaspoon brown mustard
- 12 cup pecan pieces
- In a large bowl, combine the chicken, cheese, scallions, parsley and flour.
- Sprinkle into the pie shell.
- In a medium bowl, combine the eggs, half and half, and mustard.
- Pour over the chicken mixture and top with the pecans.
- Bake in a 350 degree oven for 60 minutes or until done.
