Salmon with Tomato, Corn, and Basil Salsa

  1. The Process
  2. Preheat broiler.
  3. Rub the salmon with a bit of extra virgin olive oil and kosher salt.
  4. Place under broiler and cook for five to eight minutes, depending on the thickness of fish and preference.
  5. Meanwhile, put remaining olive oil, garlic and red pepper flakes in a pan.
  6. Lightly saute the garlic.
  7. DO NOT BROWN.
  8. Add the tomatoes and corn and heat for one minute.
  9. Add basil and salt and pepper to taste.
  10. Put aside.
  11. When salmon is done, finish with salsa.
