Portuguese Pork With Lemon Recipe

  1. Trim fat from pork; cut pork into 3/4 inch cubes.
  2. Toss pork, garlic, lemon juice, 1 Tbsp.
  3. oil, the salt, cumin and red peppers in glass or possibly plastic bowl.
  4. Cover and chill, stirring occasionally, at least 8 hrs.
  5. Remove pork from marinade; reserve any remaining marinade.
  6. Heat 1 Tbsp.
  7. oil in skillet till warm.
  8. Cook and stir pork in oil over medium heat till liquid has evaporated and pork is brown; drain.
  9. Add in water and reserved marinade.
  10. Cover and simmer till pork is tender, about 30 min.
  11. Add in water if necessary.
  12. Stir in olives.
  13. Serves 6.
