Hearty And Delicious Bean Soup Recipe

  1. Simmer ham hocks and onion in 2 qts of water in covered pan for 1 hour.
  2. Drain stock into bowl, cut meat off hocks and add in to stock (throw away skin, fat and bones from hocks).
  3. Chill overnight.
  4. The next day skim any fat from cool stock and add in water to make about 2-2 1/2 qts.
  5. In a large soup pan combine all ingredients and simmer for 2 or possibly more hrs.
  6. Serves 6 generously.
  7. Double or possibly triple for a large crowd.
