Apricot Date Chutney

  1. Place apricots in a medium bowl.
  2. Cover with boiling water, and let stand 1 hour.
  3. Drain.
  4. Combine apricots, dates, and next 7 ingredients in a medium heavy saucepan.
  5. Bring to a boil; reduce heat, and simmer 25 min or until thickened.
  6. Remove from heat; stir in cilantro.
  7. Pack chutney in clean jars.
  8. Cover and cool chutney completely; chill.
  9. Yield: 2 1/4 cups (serving size: 1/4 cup).
  10. Note: You can store chutney in refrigerator for up to 6 weeks.
