Bean Dip Weight Watchers Recipe
- 2 tsp Extra virgin olive oil
- 1/4 c. Green pepper, finely minced
- 2 Tbsp. Onion, finely minced
- 1 x Clove garlic, chopped
- 1/2 tsp Jalapeno pepper
- 4 ounce Canned pink beans, mashed
- 1/4 c. Lowfat sour cream
- 5 x Black olives, minced
- 1/2 tsp Fresh cilantro, minced
- 1/2 tsp Salt
- In small skillet, heat oil over medium heat; add in green pepper, onion, garlic and jalapeno pepper (seeded and chopped), and saute/fry till vegies are softened, 1-2 minutes.
- Add in beans and cook, stirring frequently, till beans are thoroughly heated, 2-3 minutes.
- Transfer to small mixing bowl; add in remaining ingredients and mix well.
- Transfer to serving dish; cover with plastic wrap and chill till flavors are blended and mix is well chilled, at least 30 minutes.
