Baby Potatoes Supreme

  1. Wash and lightly scrub potatoes.
  2. Do not peel.
  3. Boil potatoes in a pot until tender.
  4. Do not overboil.
  5. Drain potatoes and place into a serving bowl.
  6. Coat lightly with olive oil and toss gently.
  7. Add salt, peppercorns, garlic and chopped parsley.
  8. Toss gently to get an even distribution of ingredients.
  9. Cover bowl with cling wrap and let stand until ready to serve.
  10. This recipe always tastes better if served the next day.
  11. Serve hot or cold.
  12. To serve hot, just microwave to serving temperature.
