Squid and Clam Appetizer

  1. A few hours before serving, cut squid lengthwise into 1/2 inch strips, and then cut strips in half.
  2. Simmer in boiling salted water for 1 hour or pressure cook for 5 minutes.
  3. Drain.
  4. Drain clams and rinse.
  5. In a large bowl, combine lemon peel and juice, oil, parsley, pimiento, salt and pepper.
  6. Add squid and clams.
  7. Marinate in refrigerator at least 1 hour.
  8. Allow to stand at room temperature for 15 minutes before serving.
  9. Drain and arrange on shredded lettuce.
