Smoked bacon wrapped onion rings

  1. Cut onions into 1/2" thick rings.
  2. Remove most of the centers
  3. Brush onions with hot sauce
  4. Wrap each onion ring with bacon (2 to 3 slices) user skewer or toothpicks to hold on bacon
  5. Coat with pepper and smoke, grill, or bake for about 90 minutes at 250-350f
  6. To make Sriracha mayo, combine 2T mayo with 1 T Sriracha and 1 line juice
