Cheesy Meat & Potato Croquettes

  1. Cook and stir first 3 ingredients in skillet sprayed with cooking spray on medium-high heat 10 min.
  2. or until onions are crisp-tender.
  3. Combine meat, potatoes and cheese in large bowl.
  4. Add onion mixture; mix well.
  5. Cool completely.
  6. Shape into 15 (3-inch) sausage-shaped croquettes.
  7. Dip, 1 at a time, in egg then in cracker crumbs, turning to evenly coat both sides of each croquette.
  8. Heat oil in large saucepan to 375F.
  9. Add croquettes, in batches; cook 3 min.
  10. on each side or until golden brown on both sides.
  11. Drain on paper towels.
  12. Serve warm.
