Unusual Spinach Dip - in a Good Way!!
- 1 (8 ounce) package frozen chopped spinach
- 1 (8 ounce) package cream cheese, softened
- 12 cup sour cream
- 1 (12 ounce) jar marinated artichokes
- 1 (7 ounce) jar roasted peppers, drained
- 12 cup grated parmesan cheese (I used more for thicker consistency)
- salt and pepper
- cayenne pepper (optional)
- Thaw spinach as directed on package, squeeze out any excess liquid.
- Set aside.
- In a food processor, combine cream cheese, sour cream and undrained artichoke hearts.
- Pulse until blended.
- Add drained peppers and Parmesan cheese, pulse until fairly smooth.
- Season with salt and pepper.
- Add cayenne pepper if using.
- Add spinach and pulse until blended.
- Transfer mixture to a microwave safe bowl, suitable for serving.
- Sprinkle top with Parmesan cheese if desired.
- Microwave on high for 7 minutes until heated through and bubbly.
- Stir, serve with crackers.
