Parmesan Smashed Potatoes
- 1 Baby red potatoes with skins, cut into chunks
- 1 Yukon gold, peeled, chunks
- 1/4 tsp salt
- 1/4 cup oil
- 3/4 cup fresh parmesan cheese
- 1/2 tsp pepper
- Boil chunked potatoes in water w/ 1 tsp salt for 14 min.
- Drain, mash (leave chunks), add remaining ing.
- Place in pie pan and bake 50 minutes until lightly brown.
