Szechuan Pepper Salt

  1. Heat small skillet over medium-low heat.
  2. Add Szechuan pepper, and cook 4 to 5 minutes, or until fragrant and slightly darker in color, shaking pan frequently.
  3. (If pepper starts smoking, immediately remove from pan or it will become bitter.)
  4. Transfer to small bowl to cool.
  5. Pound in mortar and pestle, or grind in electric grinder to fine powder.
  6. Stir in salt.
  7. Store in small jar.
