Seriously Addictive Caramel Corn

  1. Combine oleo, sugar and corn syrup in a heavy saucepan.
  2. Boil 5 minutes while carefully stirring.
  3. Remove from heat and add baking soda and vanilla.
  4. Stir to combine.
  5. Pour puffed corn onto a jellyroll pan and pour caramel mixture over the corn.
  6. Toss carefully to coat.
  7. It may take 2 pans.
  8. Bake at 250 degrees for one hour stirring every 15 minutes.
  9. Allow to cool before eating.
  10. Will keep in an airtight container for a week or so.
