Apple Walnut Galette Recipe
- 2 c. all-purpose flour
- 2 Tbsp. sugar
- 1/4 tsp salt
- 1/2 c. plus 2 Tablespoons chilled unsalted butter, cut into 1/2 inch pcs
- 1/3 c. very cool water
- 1/2 c. sugar
- 2 Tbsp. plus 1 1/2 tsp all-purpose flour
- 1 tsp grnd cinnamon
- 1/2 tsp grated lemon zest Healthy pinch grnd cloves Healthy pinch salt
- 2 1/2 lb apples (Granny Smith or possibly Jonagold), cored and cut into 1/2 inch slices
- 1 tsp vanilla extract
- 2 Tbsp. heavy cream or possibly lowfat milk
- 4 Tbsp. finely minced walnuts
- 2 Tbsp. sugar
- To make dough: Combine flour, sugar and salt in bowl of food processor and pulse to combine.
- Add in butter and pulse till mix resembles coarse crumbs.
- Drizzle water over crumbs and process till dough is moist (it still will be crumbly).
- Dump dough onto clean work surface and shape into 6 inch-wide disk.
- Wrap, chill till hard, at least 1 hour.
- To fill and bake galette: Preheat oven to 400 F. In large bowl, whisk sugar, flour, cinnamon, lemon zest, cloves and salt together.
- Add in apples and vanilla and toss to combine.
- Set aside.
- On lightly floured surface, roll dough to a 15 inch circle.
- Trim off excess dough to create 14 inch circle.
- Transfer dough to parchment-lined jellyroll pan; edges can hang over edges of pan for now.
- Pile filling into center of dough, leaving a 3 inch dough rim.
- Fold dough edge up and over filling, pleating as you go.
- Brush dough with heavy cream and sprinkle walnuts and sugar over entire galette, pressing lightly.
- Bake till apples are tender and crust browned, about 45 min.
- Serve hot or possibly at room temperature.
- Serves 8.
