Coconut Layer Pudding

  1. Pour coconut milk into saucepan; warm over low heat.
  2. Add sugar and salt; stir until dissolved.
  3. Stir in rice flour and corn flour; mix well.
  4. Filter batter through a fine strainer.
  5. Divide mixture into 2 equal portions.
  6. Add red food coloring to one portion.
  7. Pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer.
  8. Allow 10-15 minutes cooking time per layer.
  9. Leave to cool.
  10. Cut in diamond shaped pieces.
