Coconut Layer Pudding
- 6 14 cups coconut milk
- 1 12 cups sugar
- 14 teaspoon salt
- 2 14 cups rice flour
- 34 cup cornflour
- 34 teaspoon red food coloring
- Pour coconut milk into saucepan; warm over low heat.
- Add sugar and salt; stir until dissolved.
- Stir in rice flour and corn flour; mix well.
- Filter batter through a fine strainer.
- Divide mixture into 2 equal portions.
- Add red food coloring to one portion.
- Pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer.
- Allow 10-15 minutes cooking time per layer.
- Leave to cool.
- Cut in diamond shaped pieces.
