Cheesey leek and potato bake
- 200 grams cheddar cheese
- 4 medium baking potatoes
- 2 medium leeks
- 1 medium onion
- dash milk
- tsp vegetable oil
- 1 extra cheese for topping
- Peel and slice potatoes into quarters and boil for 25 mins or until tender
- Peel and slice leeks and onion
- Fry the leeks and onion in separate pans in a little vegetable oil until tender
- Mash the potatoes in a large bowl with the milk then add the leeks, onion and cheese and mix well
- Place bake into oven proof dish, sprinkle with cheese and bake for 20 mins
