Cheesey leek and potato bake

  1. Peel and slice potatoes into quarters and boil for 25 mins or until tender
  2. Peel and slice leeks and onion
  3. Fry the leeks and onion in separate pans in a little vegetable oil until tender
  4. Mash the potatoes in a large bowl with the milk then add the leeks, onion and cheese and mix well
  5. Place bake into oven proof dish, sprinkle with cheese and bake for 20 mins
