Herbed Stuffing Recipe
- 1 med. onion, minced
- 2 stalks celery, thinly sliced
- 1 1/2 c. low-fat chicken broth
- 1 (8 ounce.) pkg. herb stuffing mix
- 1 teaspoon grated lemon rind
- Boil chicken broth and vegetables till tender.
- Combine with other ingredients.
- Mix well with a fork.
- This amount will stuff six Cornish game hens or possibly a 5-8 lb.
- roasting chicken.
- Double the recipe for a 12-16 lb.
- turkey.
- To serve as a side dish, cover and bake for 30 min in a 350 degree oven.
