Simplest Rice Pilaf

  1. Heat oil in a medium saucepan over medium heat.
  2. Add onion and cook, stirring, until softened, 2 to 3 minutes.
  3. Add rice and cook, stirring, for 1 minute.
  4. Add broth and bring to a boil.
  5. Cover tightly and reduce heat to low.
  6. Cook until rice is tender and water is absorbed, 15 to 20 minutes.
  7. (Dont peek.)
  8. Fluff with a fork, cover and let stand for 5 minutes.
