Pierogies
- 1 1/2 c. leftover mashed potatoes
- 1/2 c. chopped sauerkraut
- .13 tsp. Pepper
- Wonton-skin wrapper
- sour cream
- Parsley
- In medium bowl, combine potatoes, sauerkraut, and pepper.
- Place scant tablespoon mixture in center of wonton-skin wrapper; dab edges of wrapper with water.
- Fold and pinch edges to enclose filling.
- Place under damp paper towels.
- Repeat with remaining filling.
- Cook in 6-quart saucepot of salted boiling water 3 minutes or until dough is cooked through.
- Drain well.
- Serve with sour cream and chopped parsley.
