Farmers Breakfast
- 1/4 lb Bacon (or 1/2 lb if you would like a little more)
- 1 lb hash browns
- 1/4 tsp onion powder
- 2 tbsp chopped parsley
- 6 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup shredded cheddar cheese
- In large skillet, fry bacon.
- Then add hashbrowns, onion powder, & parsley.
- Stir & cook for 5 minutes.
- Can add a little olive oil (up to 2 tbsp) if things start to stick.
- If you decide to use things like turkey bacon, you will need olive oil & maybe up to 4 tbsp, since other bacons, besides pork, do not produce as much grease.
- Stir in eggs, salt, & pepper.
- Evenly spread in pan.
- Top with cheese.
- Cover & cook for 5 more minutes.
- Loosen gently with spatula, cut into wedges & serve up.
