Remoulade Sauce

• 1 cup Fresh Mayonnaise or good-quality prepared mayonnaise
• 2 tablespoons chopped cornichons or good-quality gherkins
• 1 tablespoon chopped capers
• 2 tablespoons chopped fresh tarragon
• Freshly ground black pepper, to taste

1. In a medium bowl, mix together the mayonnaise, cornichons, capers, tarragon and pepper.
2. Cover with plastic wrap and refrigerate until ready to serve.
