- 1 cup seedless raisin
- 1 cup water
- 34 cup soft shortening (not butter)
- 2 eggs
- 1 12 cups sugar
- 1 teaspoon vanilla
- 2 12 cups flour
- 1 teaspoon cinnamon
- 12 teaspoon baking powder
- 12 teaspoon clove (optional)
- 1 teaspoon baking soda
- 2 cups rolled oats
- 1 teaspoon salt
- 12 cup chopped nuts
- Simmer the raisins and water in saucepan over low heat, until plump, 20 to 30 minute Drain raisin liquid into measuring cup.
- Add water to make 1/2 cup.
- Heat oven to 400 degrees.
- Cream shortening, sugar, eggs and vanilla.
- Stir in raisin liquid.
- Blend flour, baking powder, soda, salt and spices.
- Stir into wet ingredients.
- Add oats, nuts and raisins.
- Drop rounded teaspoons full onto ungreased baking sheet.
- Bake 8 to 10 minutes.
- Makes 6 to 7 dozen.
