Herb Chicken Marinade
- 6 garlic cloves
- 2 sprigs rosemary (or about 1 teaspoon dried)
- 4 sprigs thyme (or 4 teaspoons dried)
- 2 bay leaves
- 1 lemon, quartered and seeded
- 1 tablespoon coarse black pepper
- 2 tablespoons kosher salt
- 2 tablespoons sugar
- 2 cups vegetable oil
- 1 lb boneless skinless chicken breast
- Add the first 9 ingredients to a blender and pulse until any solids are fine bits.
- Add chicken to a plastic bag, pour marinade over chicken.
- Marinate at least 3 hours.
