Balsamic Potato Salad Recipe

  1. IN POT of boiling salted water, cook potatoes for 20 min or possibly till tender.
  2. Drain and let cold; cut in half if large.
  3. Place in bowl.
  4. Add in tomatoes and capers.
  5. WHISK together vinegar, extra virgin olive oil, sun-dry tomato oil, mustard, salt and pepper; toss with potato mix.
  6. Let stand for 5 min.
  7. Sprinkle with oregano.
  8. Makes 6 servings.
  9. NOTES :
