Ham and Jalepeno Scramble
- 1 large egg
- 1/4 tsp baking powder
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1 dash ground cumin seed
- 1 dash 2% milk
- 1 dash salt & pepper, to taste
- 1 large button mushroom, sliced thin or chopped (optional)
- 1 jalepeno, diced
- 2 slice ham, deli style thin sliced
- 1 tbsp sharp cheddar, finely shredded
- 1 pinch fresh cilantro, to garnish
- Heat lightly greased skillet over medium heat.
- Sautee jalepeno first for just a moment or two, followed by adding in mushroom.
- Leave on low heat to cook slow while preparing scramble.
- In small bowl, scramble egg with milk and baking powder.
- This will stretch the egg and help it cook to be fluffy.
- Add the rest of the dry seasoning.
- Re-raise heat of skillet back to medium.
- Add ham to skillet.
- Fold in egg mixture.
- Scramble in pan until thoroughly cooked.
- This should only take 1-3 minutes.
- Plate scramble, top with shredded cheddar and fresh cilantro.
- Serve immediately!
- Also great dotted with hot sauce - Tapatio brand is my favorite.
