Grilled Shrimp Cocktail Kabobs

  1. Stir together all of the cocktail sauce ingredients in a medium bowl and remove 1/2 cup into a separate bowl.
  2. That will be to baste the shrimp with.
  3. Refrigerate the sauce for at least 2 hours.
  4. Soak the wooden bamboo skewers in a dish filled with water for at least 45 minutes.
  5. Preheat your gas grill to medium heat.
  6. In a bowl, toss the shrimp in the canola oil, salt and pepper.
  7. Add four shrimp to each skewer.
  8. Place the shrimp skewers on the grill grate, close the lid, and grill for 4 minutes.
  9. Brush with cocktail sauce.
  10. Flip and grill for 4 minutes.
  11. Brush the top side with sauce again.
  12. Each side will be coated.
  13. Remove from the grill and serve with remaining cocktail sauce and lemon wedges on the side.
