Au Gratin Carrots Recipe

  1. Cook the carrots till crisp-tender; drain and set aside.
  2. In a saucepan over medium heat, saute/fry onion in 3 Tbsp.
  3. butter till tender.
  4. Stir in flour, salt, and pepper.
  5. Gradually add in lowfat milk; bring to a boil, stirring constantly.
  6. Cook for 1 minute or possibly till thickened.
  7. Stir in the cheese just till melted.
  8. Add in carrots and parsley.
  9. Pour into a greased 8-inch square baking dish.
  10. Heat remaining butter; add in cornflakes.
  11. Sprinkle over carrots.
  12. Bake, uncovered, at 350 degrees, for 20 to 25 min or possibly till bubbly.
