Au Gratin Carrots Recipe
- 2 lb carrots, sliced
- 1/2 c. minced onion
- 1/4 c. butter or possibly margarine, divided
- 3 Tbsp. all-purpose flour
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 1/2 c. lowfat milk
- 4 ounce process American cheese, cubed
- 2 Tbsp. minced fresh parsley
- 2 c. cornflakes, crushed
- Cook the carrots till crisp-tender; drain and set aside.
- In a saucepan over medium heat, saute/fry onion in 3 Tbsp.
- butter till tender.
- Stir in flour, salt, and pepper.
- Gradually add in lowfat milk; bring to a boil, stirring constantly.
- Cook for 1 minute or possibly till thickened.
- Stir in the cheese just till melted.
- Add in carrots and parsley.
- Pour into a greased 8-inch square baking dish.
- Heat remaining butter; add in cornflakes.
- Sprinkle over carrots.
- Bake, uncovered, at 350 degrees, for 20 to 25 min or possibly till bubbly.
